If you are planning a family reunion and you don’t know with which appetizer to pleasantly surprise the palate of your guests, don’t worry, because today we bring you a perfect dish for this occasion, avocados stuffed with boiled egg, an easy and quick recipe that will catch them with its flavor and texture from the first bite.
Ingredients
- 6 eggs
- ½ onion
- 1 radish
- ¼ cup mayonnaise
- 1 teaspoon mustard
- Salt and pepper to taste
- 1 pinch cumin powder
- 1 teaspoon ground oregano
- Juice of 2 freshly squeezed lemons
- 3 avocados
- Olive oil to taste
- Fresh dill to taste for garnish
Preparation
- In a medium saucepan add enough water and cook over medium-high heat, when it starts to boil, introduce the eggs to cook for 5 minutes.
- After this time, carefully remove the eggs from the pot and place them in a bowl of cold water, preferably with ice.
- Meanwhile, finely chop the onion and radish and set aside in a bowl.
- Cut the avocados in half lengthwise, remove the stone and remove some of the flesh from the center. Spread the juice of 1 lime over the surface of the avocado halves.
- Add the pulp you removed to the bowl, along with the remaining lemon juice, cumin, oregano, salt and pepper to taste and stir.
- Now peel and cut the eggs into small pieces, add to the bowl, as well as the mayonnaise, the mustard, adjust the salt if necessary and add the desired amount on each avocado half.
- All that remains is to serve and enjoy these succulent avocados stuffed with boiled egg, adding a little olive oil and fresh dill to taste.
Tips
If you want to add a sweet touch to the filling, add 2 tablespoons of ketchup.
To make the filling a little lighter, substitute the mayonnaise for the same amount of plain yogurt.
If you like it spicy, add a finely chopped serrano chile or jalapeño pepper to the filling.
