Normally burritos are usually prepared with flour tortillas which have become a tradition from northern Mexico, however today we bring you a version of burritos with corn tortilla, which offers different but very delicious flavors and textures.

Corn tortillas, unlike flour tortillas, are a little more salty and with a softer consistency, they also do not contain gluten and provide us with fewer calories and carbohydrates, not to mention that they are a source of vitamins such as calcium, a characteristic It is important to note that these tortillas are small in size and have less resistance to the humidity provided by the dressings. For this reason, it is recommended to use double tortillas for each burritos that are prepared.
For this recipe for burritos with corn tortillas we will prepare a very classic filling based on pork, fresh vegetables, guacamole and its elaboration will not take long, so do not miss any detail.
Ingredients
- 8 corn tortillas.
- 600 gr of pork loin.
- 1 teaspoon of garlic powder.
- 1 tablespoon of paprika
- Juice of 1 lemon.
- 2 tablespoons of white wine.
- Salt and pepper to taste.
- 1 tablespoon of oil
- Guacamole to taste.
- 1 red onion, diced.
- 2 sliced tomatoes.
- 2 radishes sliced.
- ½ cup chopped coriander
- Lemon slices to taste.
Preparation
We cut the pork loin into strips or squares, place it in a bowl and season with garlic, paprika, lemon juice, wine, salt and pepper to taste, reserve in the refrigerator for at least 1 hour.
After time, add the oil in a hot pan and add the pork, let it cook for about 10 minutes while constantly stirring and removing from the heat.
We heat the corn tortillas, we join two of them lengthwise, we add guacamole, pork, onion, tomato, radishes and coriander, we roll carefully not to break the tortillas and we taste this delicious burrito.
